Carefully split cookies with a twisting motion. Using a butter knife or spatula, scrape filling into a bowl.
Combine Creme filling, vanilla frosting, and green food coloring. Mix well and put into a piping bag with a star tip. You can use a zip lock bag and snip the corner as an alternative.
Alternate cookie and icing starting with two classic cream cookies and finishing with a mini cookie. Decorate with sprinkles and enjoy! The cookies will keep in an airtight container for one week.
